Breakfast:
Green smoothies
2 slices wheat toast
Lunch:
Green, Green Enchiladas
Victor and Kellie took us out for lunch to Kirby's Lane. These enchiladas were filled with spinach, mushrooms, artichoke hearts and covered with tomatilla sauce and cheese. Black beans and Mexican rice as the side dishes. It was so good.
Snack:
Warm apple juice
Small handful of mixed nuts
Small handful of Mrs. Mays Ultimate crunch (from Costco)
Dinner:
Naan Pizza
Lettuce salad
I now have a fairly healthy pizza recipe thanks to cousin Kellie. Use Naan whole wheat pizza crust (similar to Boboli). Layer with pizza sauce, veggies (or whatever toppings you like), cheese and pop in the oven for a couple minutes. It is so good and pretty healthy.
Homemade pizza sauce:
2 small cans (or 1 large) Tomato paste
little water to thin
3/4 tsp olive oil
oregano to taste
Minced garlic
Toppings:
Mushrooms
green onions
red & green bell peppers
Fresh tomatoes
