Day 122 - Thursday, Jan 8

Ran on mini tramp for 30 minutes. Ab and side crunches (60). Leg and butt exercises.
Up and down the basement stairs at least 5 times last night and 5 times today. That definitely counts as great exercise.

Breakfast:
Green smoothie (a frozen one thawed out)
Pumpkin muffin (I am so happy to have muffins again)

Snack:
Orange

Lunch:
Peanut butter & honey on whole wheat
Carrot & celery sticks, broccoli florets

Snack:
Pear
Mixed nuts

Dinner:
I had to leave at 4:00 today and knew I wouldn't be back until around 7:00 so I made dinner, put it in a casserole dish and baked in the oven for 3 hours at 290 degrees.
1 cubed potato
1 sliced carrot
1/4 cubed butternut squash
1/8 cabbage - cut into large pieces
Mixed all veggies together in a casserole dish and topped with
2 Salmon steaks and
1/4 cup butter sliced
Salt & pepper

It was ready when we got home and was so DELICIOUS!

I think I need an award or something. This is the longest I have gone in hardly eating out and cooking dinner most every night for 4 months. I haven't done that since I had a family at home to cook for and even then we ate out far too often. Now I don't have a desire to eat out and I prefer to stay home and cook.

I need to get a plan together for what I can take with me to eat while we are traveling on the plane to Texas, and then what I can eat while in Texas. Malinda will most likely not have the healthy kind of food I need to eat, so I will be making a trip to the grocery store for bags of salad mix, fruit, wheat bread (maybe I will pack my muffins - YEA that is a great idea).
