Day 40 - Oct 17 '08

Exercised on the mini tramp for 30 minutes. Used hand weights for upper body strengthening while jogging on the tramp for about 10 of the 30 minutes.

Breakfast:
Blueberries & granola in yogurt

Lunch:
Lettuce salad (spinach, romaine, carrots, radishes, cauliflower, broccoli, tomato, almonds)
8 grain crisps w/ mango salsa
1/2 small honeydew

Dinner: It doesn't look to good from the picture, but it actually tasted pretty good.
Shrimp stir fry w/ bean noodles

I baked muffins today. Two new recipes. I am really especially excited to try the Pumpkin Oat Muffins. They feel so moist. I went to the library yesterday and looked for recipe books. I found 4: Baking without Fat by George Mateljan (he has the Worlds Healthiest Foods website of which I have a link t0on the right side of this page), Recipes from the Old Mill - Baking with Whole Grains by Sarah E. Myers and Mary Beth Lind, Eating for Life by Bill Phillips, and The Raw Food Gourmet by Gabrielle Chavez. I am not going to go raw. I like cooked foods, but I believe the more raw food we can put in our diet the better off we are, so I got it to try some new and different recipes. The muffin recipes I tried today are: Bran Muffins from - Recipes from the Old Mill, and Pumpkin Oat Muffins from - Baking without Fat, and it really has no fat in the recipe. I also tried my first dessert in 41 days. Oatmeal "Smacks". This recipe came from "The New 8 week cholesterol cure". I thought it turned out very nice, but Dennis didn't care for it much and only ate 1/2 of his piece. It reminds me of a granola bar with meringue on top. Still it was pretty good. I wanted to make pumpkin cookies, but after looking through all of my recipe books at home and from the library I couldn't find one. I am going to try a new recipe each day for the next couple of weeks and weed out the not so good ones from the keepers. I also plan on making a new file for healthy recipes.

I had to notch my belt up another notch today. I was tired of my pants sliding down. It is a great feeling. I still won't get on the scale until November 1.
Dennis came home from work today feeling sluggish and with a headache. I told him he should expect that while he is going through Pepsi withdrawals. Today is day 2 of no Pepsi for him. He has tried to quit several times in the past few years, but has never succeeded. He also has gone from swimming 3-5 days a week and working hard at his job to 6 -10 hour work days sitting in a car all day long. That alone will make a person sluggish. I'm worried about him: sitting all day, no exercise and eating lots of junk, plus still drinking soda, just trying to cut out the caffeine. I think we have officially traded places. 41 days ago I felt just like that.
