Day 157 - Thursday, Feb 12

I love the new cellerciser!!! In 15 minutes I am sweating up a storm and have worked out every part of my body. It is so much nicer than the old mini tramp. I highly recommend it - but only if you want to firm up and loose weight. It costs about as much as a yearly gym membership, maybe less, as I have not had a gym membership in a few years, AND it is guaranteed to last a life time. No more fumbling with weights, exercise bands, expensive equipment, etc. I love that it comes with a safety bar, so I can feel "safe and more secure" as some of the exercises are done AND the absolute best part is I can be done in less than 30 minutes, whereas up until now I have been spending 45 - 60 minutes exercising.

Breakfast:
Green smoothie
Carrot, squash, applesauce, oatbran muffin


Lunch:
Lettuce salad
Tortilla chips with homemade guacamole
I am on a guacamole kick right now. It is just so good.

Dinner:
Spaghetti (whole wheat noodles, homemade sauce)
Cucumber slices
1 pear

I made low-fat whole wheat banana bread today from a recipe I found on the internet. It is so moist and yummy.


Low-Fat Whole Wheat Banana Bread

4 T butter, softened (or 1/3 c canola oil)
1/4 c applesauce
2 eggs
2 T water
3/4 c packed light brown sugar (I used sucanut)
1 C mashed banana
1 3/4 C whole wheat flour
2 t baking powder
1/2 t baking soda
1/4 t salt (optional)
1/4 C chopped walnuts or pecans (optional)

Beat butter (or oil), applesauce, eggs, milk and brown sugar in large mixing bowl until smooth. Add banana and blend at low speed; beat at high speed 1-2 minutes. Combine flour, baking powder, baking soda and salt and mix into batter. Mix in nuts. Pour into greased loaf pan. Bake at 350 degrees F until bread is golden and toothpick inserted in center comes out clean (approx 60 minutes). cool in pan on wire rack 10 minutes. Remove and cool at room temperature. ENJOY!
I used the oil instead of butter and the extra mashed bananas that exceeded the cup. I also added about 1/4 cup extra water because my homemade applesauce is pretty thick compared to the store bought brands. I also add way more nuts than is usually called for because I LOVE, LOVE, LOVE them. Especially walnuts - my favorite cooking nut!
Dennis wanted a loaf made with white flour, so his is the big loaf, and the low fat, whole wheat are the two little ones. I so spoil the man!
