Day 7

Sundays have always been a harder day for dieting. Church meetings often disrupt normal eating times, and I was kind of worried coming into it. Today wasn't bad at all though. Church is from 9:00 - 12:00, so it didn't disrupt eating.
Breakfast:
Green smoothie (frozen from a couple of days ago)
Oatbran muffin

Lunch:
2 plums
My brother in law the chiropractor told me that the 3rd day would be the worst for the pain, and he was right. I hurt so bad after church that I wasn't even hungry. I sat on the couch and iced my back and chest and ate the plums. I started dozing off, so I laid down and took another 2 1/2 hour nap. When I woke up I started making dinner.

Dinner:
Baked chicken, no breading, just seasoned with salt, pepper and seasoning salt, and a little butter. Kind of bland, but I couldn't find a recipe that I had all the ingredients for, and didn't feel creative today.(can I say I love my toaster oven, I use it all the time now for just the two of us)
Mashed potatoes with butter and salt
Fried zucchini and onions
Cooked beets (fresh from by garden - DELICIOUS!!!)

I love eating off of a small plate, it makes me feel like I am eating a lot of food. I probably had too much butter today, butter on the potatoes, in the chicken, and a little to fry the zucchini in. but what else do you have on mashed potatoes if you don't have gravy? I need to get in the habit of using olive oil to cook my zucchini and onions in.

Woo Hoo!!! One week down. Big pat on the back. This week has not been bad at all. Next Sunday will be a test as we will have a big family dinner. I find that at big meals like that, a lot of times there is not one healthy thing to eat, and the desserts, I have to be able to resist. I truly am a sweet-aholic and can't even have one bite. That would be my undoinjg. Maybe I will have to volunteer to bring a lettuce salad. That way I will at least have something to eat. She said she was going to cook a roast, and the Dr. said no red meat if I'm to lower my cholesterol. (Maybe I could take some sliced cooked chicken breast to put on the salad - that would work). I might also want to bake a fruit cobbler or make some healthy brownies to eat when I get home.
