Day 12

Breakfast:
Green smoothie (fresh pears, apples, plums, apple juice, vanilla yogurt, spinach)
Oatbran muffin

Snack:
Handful of mixed nuts
1 plum

Lunch:
6" subway sandwich (other half from last nights dinner)
cucumber slices
carrot sticks

Snack:
4 potawatamie plums

Dinner:
Whole wheat/wheatbran/oatmeal/ oatbran pancakes
Peach syrup (peeled & sliced 5 peaches, blended 1/2 in a blender, put sliced peaches and peach puree in saucepan and let simmer for 20-30 minutes. I added 2 tablespoons of agave). Dennis thought is was too tart and added powdered sugar on top of his. I thought it was yummy. Next time I want to add zucchini, pumpkin or squash to the pancake mix so there is some kind of vegetable with the meal.

I felt so good today. Yah, yah I still hurt, quite a bit, but I feel like I have more energy and am so much happier that a month ago. I have been eating so many fruits and vegetables, but there is so much of them and they are so good. I used to eat so much junk food and just eat all the time. Now I don't even feel hungry for snacks, but I still eat a little something because I have so much fruit available. It won't last much longer. My mom and dad brought over peaches and more purple plums (my dad works so hard in taking care of the fruit trees all year long and then he and mom pick most of the fruit and give it away. I am so blessed to have such kind and generous parents. In also got a bag of potowamatie plums from work. This year I am freezing all my fruit. We use so much in our smoothies and I plan on drinking green smoothies all year long. In the past I have spent hours bottling fruit only to have it sit on the shelf and turn brown and old and then throw it away. And who needs all that sugar that goes into the syrup anyway? So can you guess what I will be doing tomorrow? I only have one problem, I have run out of freezer space. I need to completely empty it and repack it and take out that stuff that is hiding in the bottom and is freezer burnt. How I would love to have an upright freezer.
