Day 4

I am glad that every day is not the same, otherwise life would be so boring. Thursdays, are quite different than the other weekdays, but each Thursday is pretty much the same. I have had the neat opportunity for the past few weeks and hopefully for the next while to help a family who had preemie twins. I get to go help feed them on Wednesday nights, so the parents can get some much needed sleep. I get home around 2:00 am. So it is the only time you will catch me sleeping in until 9:00 or 10:00 in the morning. I didn't get up and walk this morning. That would have been ludicrous to get to bed at 2:30 and wake up at 5:00. So I did something different. I jumped on the mini tramp. There is a work out for you. It really isn't jumping so much as running in place and some other different kinds of steps. It really gets the heart rate up. To keep it from being too boring, I watch one of the programs I have TiVo'd. That is great fun for me because I watch so little TV in the summer. Who wants to be stuck in front of a TV when it's light outside? Not Me! I also do laundry on Thursdays since it is my day off. Our dryer quit heating up just as all our company left this summer so until Dennis pulls it out and looks at it, I get to hang laundry out on the line. I rather enjoy it though. A great opportunity to get plenty of fresh air and sunshine (great source of vitamin D). I also cleaned the kitchen, swept and mopped the floor, scrubbed the bathroom and cleaned the downstairs kitchen. I think all of this counts for plenty of exercise today.

Breakfast:
1 cup vanilla yogurt
w/ blueberries
& french vanilla granola
This is one of my favorite breakfasts. I love blueberries and this particular granola.

Snack:
Nectarine

Lunch:
Dennis and I had to run to Salt Lake airport to pick up the mother of a friend who had a heart attack yesterday, so I ate the fruit smoothie he made me this morning and had left for me in the freezer(while I was sleeping in). I would have had a salad if I wasn't on the run.

Dinner:
Italian Surprise (a dish I concocted with leftovers)
I knew we might be late getting home from the airport and Dennis had a meeting to go to, so I put a bunch of leftovers in the crockpot to simmer while we were gone. Ingredients include:
leftover cooked wild rice
Leftover canned black beans
chopped onions
grated zucchini
homemade stewed tomatoes
leftover polish sausage
garlic, italian seasonings, salt and pepper
I ate mine with some healthy chips I found at Costco a while back. Dennis ate his with a tortilla.
It was one of the tastiest concoctions I have ever made. Dennis thinks next time I should add some cayenne pepper to it. That sounds like a good idea.

I don't think I got enough veggies today, but that is how it goes somedays. I was going to make the fruit smoothie a green smoothie, but ran out of time before we had to go the airport.

So far this change of eating hasn't been bad at all. I have more energy and haven't felt deprived. As of yet I haven't had any cravings. I'm sure they will come, but hopefully not for a long time, and by then I should have developed some great eating habits. A new store just opened up called Sunshine Farmers Market. I am excited to try it out and see their cool produce section.
