Memorial weekend May 22 - 25

It can be a challenge eating healthy while on a vacation. Below is what I ate on this my first camping trip on this healthy eating plan.

Sat, Sun and Mon mornings I had orange juice that I squoze earlier in the season and froze for camping.

Breakfast:
Sat - Fried eggs and potatoes
Sun - Oat groats (oat kernels similar to wheat) with bananas, walnuts and soymilk
Mon - Green smoothie (frozen earlier in the week and kept frozen thanks to a trailer with a small freezer) Oat bran muffin

Lunch:
Sat - Lettuce salad & peanut butter/honey sandwich
Sun - Carrots & celery sticks, Kashi granola bars, trail mix
Mon - Swiss cheese, Kashi crackers, orange

Dinner:
Sat - Taco beef stew (S made this, and I was tired and hungry so I ate it even thought it had ground beef in it)
Sun - Strawberries and granola in yogurt, cherries and mixed nuts
Mon - taco salad

Snacks:
homemade healthy whole wheat chocolate chip cookies
mixed nuts
Fruit - watermelon, nectarines, oranges

It was not hard to eat healthy, just took some forethought and a little extra preparation. I just felt weird eating something different than everyone else at most meals. I took my old trampoline along and hoped to use it, but I was too self conscious to jump on it with people watching me and there was really not a private spot to put it in. I could have gotten up early, but vacations are a time to sleep in. But I did get exercise on the two long hikes we took.
