Since we have been so busy remodeling our house, I have not been much in the mood to cook, plus I haven't wanted to with so much mess all over the place. So I have been doing pretty simple meals, which by the way are not too different from the way I eat most days anyway. Dennis is the one who struggles with it. So I try to make sure he has "meat" a few times a week. He is good at grilling his own steak, and pork chops are really easy, but take just a little planning ahead. I just put a pork chop and a baked potato in the oven for 60 - 75 minutes and steam a veggie and Dennis is as happy as can be. For me a nice big green salad and whole grain toast, and/or steamed veggie, or fried potatoes or leftovers

Breakfast
frozen whole grain waffles
topped with raw peanut butter, sliced bananas, and agave drizzled over the top
Lunch
Green smoothie
Brown rice crackers
Snack
Trail mix
Dinner
Large green salad
2 slices homemade whole grain bread
1 celery stalk with peanut butter
I just realized as I typed this that I had peanut butter twice today. I must be lacking something in my diet that I am craving it. I just love the taste of peanut butter and celery together. Yummmeeeee!!! I have had oatmeal for the last two mornings so this morning I wanted something different, but quick and easy as I had to be out of the house by 8:00 am. Tonight I needed a quick and easy meal because I got home at 5:30 and had to be to Relief Society Meeting at 6:30. I had to brown bag it for lunch today, so a green smoothie is always the way to go. I just take one out of the freezer, put it in my insulated lunch bag (no additional ice) and by lunch time it is perfect for eating. Kind of like eating soft ice cream. Pour Dennis, all he got was a salad too. He didn't complain, but I think he probably went and got himself something to eat after I went to Relief Society. I did notice an empty chocolate chip bag in the garbage can and I didn't put it there. Do you think he had a chocolate craving and that is all the chocolate in the house? Hhmmm? I wonder?
