I came up with two yummy recipes today. One I modified from another recipe, the other one I made up on my own. I just love it when I try something new and it actually tastes good. Both of these are keepers.
Rainbow salad (altered from another recipe)
Feeds 2-4
1 small zucchini diced(recipe called for green and yellow, but I only had green)
1/2 onion diced
1/4 - 1/2 carrot diced
2 medium tomatoes, chopped
1/4 cup vinegar
2-3 TBSP olive oil
1 tsp basil I used sweet basil from my new herb garden
1/2 tsp oregano Also fresh from my garden
salt and pepper to taste
(The recipe called for 1/4 cup sun dried tomatoes, (bottled, drained and chopped finely), but I did not have any
Mix all the above ingredients together, alter the herbs and seasoning to taste. The original recipe said it could optionally be served on a bed of cooked quinoa, which I did, but ended up mixing it all together and it was like a fresh pasta salad. So YUMMY!!! Even Dennis ate it (minus the quinoa). He didn't have seconds, but he finished what he served himself.
Sweet Quinoa (my version of sweet rice, which my family loves)
Cooked quinoa
Add soy or almond milk to desired consistency
Agave to sweeten
Fresh peaches
Cinnamon (I must of dumped in about a TBSP
Heat carefully to as hot or warm as you like.
This was my dessert for tonight. YUMMERS!!!
