December 26

My on my, where has the time gone. 2009 is nearly gone. What a great year this has been. If someone would have told me two or three years ago that I would be 80 pounds lighter and radically change the way I eat, I wouldn't have believed them, but here I am. My family kept asking me what I wanted for Christmas, but I didn't know what to tell them. I have pretty much everything I need/want, except a new wardrobe, so I asked for shoes, a belt, and money to buy myself some new clothes. Well I did get the money and I spent it all today and then some on new clothes. 15 months ago I was wearing size 18/20 and now I am in size 10/12. What an incredible feeling it is. The best part is I don't feel the ravenous cravings and eat constantly. I actually crave lettuce salads and foods that are good for me. Today for probably the 3rd time in our marriage I made home-made tortillas, but these were 50% wheat tortillas, and since I don't have shortening in the house, I used coconut oil, and they actually turned out and Dennis ate "3". He said they were okay. For him to say anything good at all was amazing, because if he doesn't like something, he lets you know. I guess I will be making them on a much more regular basis now. This Christmas season I have made several healthy treats to eat. I can't believe how good "weird" food tastes. Well it really isn't weird, just the ingredients are weird. Brownies made from black beans, cake made with beets and ice cream make from coconuts. So yummy, oh and the caramel corn was so overly sweet that I can't each too much at a time. The best part is that I don't feel fat, heavy, weighed down, bloated or anything. I just feel giddy and free as a bird. Oh, how I love the "hidden treasures of knowledge" that I am learning. 2010 should bring about even more good things as I continue to refine my diet. This next year I am going to try and cut out "ALL" dairy. I have still been eating some cheese, yogurt and butter, but that needs to change. I am experimenting with yogurt made from almond milk. I have yet to eat it, as it just finished yesterday. I just love how eating a diet of foods in a more wholesome "raw" state can make such a difference. I LOVE IT!!!
